Crumbled Feta


Prep time: 20 minutes
Cooking time: 3 hours
Serves 4-6

Ingredients

1 large sweet potato
1 large sweet onion
1 red bell pepper
1 jalapeno
3 cloves garlic
1 1/2 cups black beans
1 1/2 cups kidney beans
1 can or carton chopped tomatoes
1 tbsp chili powder
1 tbsp cumin
1 tbsp paprika
1 tsp cinnamon
½ tsp turmeric
1 tsp sea salt
½ tsp black pepper
1/2 cup water or vegetable broth

Sweet Potato Vegetarian Chili

I’m a firm believer that a crockpot meal shouldn’t involve sautéing, grilling or anything of that sort. This should strictly be a chop it and dump it device. K then. Here’s my vegetarian chili recipe.

Ingredients

1 large sweet potato
1 large sweet onion
1 red bell pepper
1 jalapeno
3 cloves garlic
1 1/2 cups black beans
1 1/2 cups kidney beans
1 can or carton chopped tomatoes
1 tbsp chili powder
1 tbsp cumin
1 tbsp paprika
1 tsp cinnamon
½ tsp turmeric
1 tsp sea salt
½ tsp black pepper
1/2 cup water or vegetable broth

Directions

  1. Peel & roughly chop sweet potato in ½”(ish)cubes.
  2. Chop onion and red bell pepper. Not in the mood to do the onion cry? Try chopping the onion next to your stove with the vent hood on.
  3. Finely dice garlic.
  4. Slice jalapeño in half lengthwise, remove the membrane and seeds and give it a fine chop. Do NOT rub your eyes.
  5. If using canned beans, rinse thoroughly using a mesh strainer until you no longer see foam.
  6. Combine seasoning (chili, cumin, paprika, cinnamon, turmeric, salt, pepper) in a small bowl and mix
  7. Dump the prepped ingredients, chopped tomatoes and water or broth into 3 quart or larger crock pot. Cook on high for 3 hours or low for 7.

Serving suggestions: Greek yogurt, diced tomato, avocado, green onion, crumbled feta, tortilla chips
