Crumbled Feta


Prep time: 10 minutes
Cooking time: 5 minutes

Ingredients

Avocado Toast
1 sweet potato
1 avocado
2 tbsp crumbled feta
juice from ½ lime
salt
turmeric
red pepper flakes (optional, but encouraged)

Almond Butter Toast
1 Sweet Potato
¼ cup almond butter, or nut butter of your choosing
1 apple, sliced
Cinnamon

Sweet Potato “Toast” Two Ways

This was WAY easier than I anticipated. I don’t normally shy away from eating bread, but cutting back on carbs feels good sometimes. So, when I saw sweet potato “toast” popping up on some health blogs, I figured it was worth the try. Plus sweet potatoes are loaded with nutrients like Vitamin A, Vitamin C and Manganese. They are anti-inflammatory, antioxidant rich AND help regulate blood sugar. No biggie.

Avocado Toast
1 sweet potato
1 avocado
2 tbsp crumbled feta
juice from ½ lime
salt
turmeric
red pepper flakes (optional, but encouraged)

Almond Butter Toast
1 Sweet Potato
¼ cup almond butter, or nut butter of your choosing
1 apple, sliced
Cinnamon

Directions

    Avocado Toast

  1. Slice sweet potatoes in 1/4″ slices
  2. Add sweet potato slices to toaster for a full cycle (highest setting).
  3. While toasting, slice avocado and gather remaining ingredients.
  4. When sweet potato is blackened in some spots and has some bend to it, remove from toaster. It will likely take about two rounds in the toaster.
  5. Top the “toast” with sliced avocado, lime juice, crumbled feta, salt, red pepper flakes and turmeric.
    Almond Butter Toast

  1. Slice sweet potatoes in 1/4″ slices
  2. Add sweet potato slices to toaster for a full cycle (highest setting).
  3. While toasting, slice apple and gather remaining ingredients.
  4. When sweet potato is blackened in some spots and has some bend to it, remove from toaster. It will likely take about two rounds in the toaster.
  5. Top the “toast” with almond butter, sliced apple and cinnamon.
