Slow-Cooker Curried Lentil Stew

Ingredients

4 carrots
2 small onions
4 cloves garlic
1 inch piece of ginger
1 tbsp cumin
1 tbsp curry powder
2 tsp paprika
2 cup dry green lentils
2 tbsp tomato paste
4 cups veggie broth (6 cups for a soupier consistency)
1 tsp sea salt
2 tbsp balsamic vinegar
2 large handfuls spinach
juice from 1 lemon

Garnish/Extras
1 cup greek yogurt
parsley
pita or naan, for scooping

Slow-Cooker Curried Lentil Stew

Lentils are one of those nutritional powerhouses – filled with iron, protein, fiber, folate – and so much more good stuff. The addition of anti-inflammatory spices in curry powder make this an absurdly healthy dish.

Note: Don’t want to use the slow cooker? No worries! I recommend sautéing the onions and garlic for a few minutes then adding the remaining ingredients, stir, bring to a boil and then simmer for 30-40 minutes.

Ingredients

4 carrots

2 tbsp balsamic vinegar
2 large handfuls spinach
juice from 1 lemon

Garnish/Extras
1 cup greek yogurt
parsley
pita or naan, for scooping

Directions

  1. Peel and chop carrots, onions, and garlic.
  2. Peel and grate ginger.
  3. Add all ingredients except balsamic vinegar, spinach, lemon, and garnishes to 3 quart or larger crockpot. Stir and set to high for 3-4 hours or low for 7-8.
  4. Taste to ensure lentils are cooked through. If needed, cook for an additional 30 minutes.
  5. Stir in lemon juice, balsamic and spinach just before serving. The spinach should be just slightly wilted.
  6. Ladle the soup into bowls and garnish with a dollop of greek yogurt and parsley. Serve with warmed pita or naan.
