Crumbled Feta


Prep time: 15 minutes
Cooking time: 0 minutes (yay!)
Serves: 4 (as a side dish)

Ingredients

2 peaches, cut into wedges
2 large tomatoes, cut into wedges
2 handfuls arugula
¼ cup feta, crumbled
½ red onion, very thinly sliced
6 tbsp extra virgin olive oil
4 tbsp apple cider vinegar
1 tbsp sea salt
1/4 tbsp fresh cracked pepper

Peaches ‘n Dreams

Keepin’ you S to the L to the I to the M. A perfect (and super easy) salad to celebrate the end of peach and tomato season for those of you that aren’t ready to pumpkinfy everything.

Ingredients

2 peaches, cut into wedges
2 large tomatoes, cut into wedges
2 handfuls arugula
¼ cup feta, crumbled
½ red onion, very thinly sliced
6 tbsp extra virgin olive oil
4 tbsp apple cider vinegar
1 tbsp sea salt
1/4 tbsp fresh cracked pepper

Directions

  1. To cut the peaches into thin wedges: first divide the peach in half and remove the pit. Then, with the cut side down, cut wedges towards the middle. You should have about 10 wedges per peach.
  2. Repeat the same process for the tomatoes.
  3. Combine arugula, tomatoes,
    peaches, onions and feta in a large bowl.
  4. Dress with oil, vinegar, sea salt and fresh cracked black pepper. Toss to coat and enjoy with some bubbly or rosé.
