Crumbled Feta


Prep time: 30 minutes
Cooking time: 40 minutes
Servings: about 20 slices

Ingredients

4 sweet potatoes
olive oil
salt
fresh ground black pepper

Toppings
2 avocados
1 pound uncured bacon (optional)

Cilantro Lime Crack Yogurt
1 cup greek yogurt
Juice from 1/2 lime
1 tsp salt
1 cup cilantro leaves (loosely filled)

Pico
4 plum tomatoes
½ small white or red onion
2 jalapeños
Juice from ½ lime
1 tsp salt

Loaded Sweet Potatoes

I’ve developed a slight obsession with sweet potatoes. When I was a kid, I avoided them like the plague. No particular reason, other than the color maybe. Idk. Thank goodness deep fried sweet potatoes became a thing and made me realize these things are DELISH! Nowadays I’m trying to find every possible way to incorporate sweet potatoes into recipes, without deep frying out the nutritional benefits.

This recipe is a healthy-ish alternative to traditional potato skins, making them a great addition to your super bowl party. The bacon adds the “ish” to the healthy, but can be omitted altogether for a fully vegetarian version.

Ingredients

4 sweet potatoes

Directions

Crumbled Bacon

  1. Preheat oven to 400 degrees. Lay bacon on a sheet pan and cook 20 minutes, until crispy.
  2. Remove from oven and dry on paper towels to remove excess fat. When cooled, crumble bacon with hands or chop with a knife. (Leave oven on to cook sweet potatoes)

Pico

  1. Cut jalapeño in half lengthwise and remove seeds and membrane. Leave about half if you like it spicy.
  2. Dice tomatoes, onion and jalapeños. Combine in bowl and season with lime and salt. Taste and add add’l lime or salt if needed. Note: Pico can be made days ahead. Just wait until right before serving to add the lime and salt.

Cilantro Lime Crack Yogurt

  1. Chop cilantro and combine with yogurt, lime juice and salt in bowl and mix. Taste and add add’l lime or salt if needed. Note: This can also be made ahead and stored in the fridge for a few days.

Cooking & Assembly

  1. Slice sweet potatoes in ¼” slices. Add to sheet pan, coat with olive oil and season with salt & pepper. Cook in 400 degree oven for 20 minutes, flipping halfway.
  2. Cut avocados in half and remove core. Slice the avocados thinly and use a spoon to scoop out.
  3. Top sweet potatoes with sliced avocado, pico, cilantro lime yogurt and crumbled bacon. Garnish with cilantro if you’d like.. then serve em up!
