Crumbled Feta

Ingredients

Burgers
2 pounds ground lamb
2 tsp dried mint
1 tsp dried oregano
1 tsp cumin
1 tsp garlic powder
1 tsp salt
1 tsp freshly ground black pepper
16 slider buns (parker house rolls work great)
4 tbsp olive oil

Caramelized Onions
2 yellow onions
1 tbsp butter
2 tbsp olive oil
¼ cup dry white wine (broth, mild vinegar or water with lemon are good substitutes)

Spicy Feta Spread
½ cup feta
½ cup greek yogurt
2 tbsp lemon juice
1 tbsp chili powder
½ tsp cayenne pepper
½ tsp garlic powder
salt, to taste

Optional Additional Toppings
tomato
cucumber
more feta 😉

Lamb Sliders with Caramelized Onion & Spicy Feta Spread

Try these out at your next football or cocktail party and watch everyone’s eyes roll to the back of their heads as they devour the burgers. This guy is a multi-stepper, but hear me out. The caramelized onions and feta spread can be made ahead, leaving you with only the burgers to cook and assemble the day of a party!

Lamb burgers have an amazing rich flavor that will turn any vegetarian into a meat eater. I even told my husband (vegetarian) that I would convert him with these, but alas, he’s holding out on me and hasn’t tried them yet. Ps, you may need to make extra feta spread to account for the spoonfuls you will eat before assembling the burgers.

Ingredients

Burgers
2 pounds ground lamb

Directions

Burgers

  1. Combine all seasonings in a small bowl and mix.
  2. Add lamb to a bowl and cover with seasoning. Mix with hands and set aside for at least 30 minutes to let the flavors get all happy.
  3. Form the mixture into ½” thick patties slightly larger than your buns and add a dimple to the middle using your thumb – when cooked, burgers will shrink and puff up in the middle. You should have about 16 sliders

Caramelized Onions

  1. Slice onions about ⅛” thick (use a mandoline if you have).
  2. Add butter and olive oil to cast iron, ceramic or stainless steel skillet/pot. Warm on medium low heat – the key is low and slow for caramelizing onions, otherwise they burn quickly.
  3. Add onions to skillet and toss to coat in butter/oil. Let cook for 35-45 minutes, stirring every 10 minutes. If they start to burn, add white wine in increments to deglaze the bottom of the pan. They are finished when they have a deep caramel color.

Spicy Feta Spread

  1. While the onions caramelize, combine all ingredients for spicy feta dip in a bowl and mix, If you prefer a less chunky version, pulse in a food processor.

Cooking & Assembly

  1. Working in batches, coat a skillet or grill with olive oil and warm on medium-high. Flipping halfway, cook sliders for 3 minutes per side.
  2. Add the slider to bun, top with a dollop of feta spread and caramelized onion. Add a couple cucumber slices for the perfect crunch. A toothpick may be needed to hold these cuties together. 🙂
